Baking Class

One of my plan for Y2008 is to be able to make great taste and look birthday cake in addition to cupcake. Although I had previously attended 2 baking classes, I am still quite skeptical about my skill on baking a good sponge cake.
Happened to find out that Gina from Kitchen Capers was conducting baking class for Chiffon and Sponge cakes. I was glad that I attended the class as it really regain my confident for my next attempt. The recipes given were really good and in fact by far that was the best baking class that I had attended based on recipe and learning experience.
I already have in mind the list of cakes that I am going to bake for upcoming occasions :)
Preparation work prior the class commence.

It is not any cake but Nasi Lemak compliment from Gina and Secret Chef. This is how it looks like and it taste real good!

We also had Longtong curry with paste made by Gina....taste yummy!!!

Spiderman Theme Cupcake


One of the plan to be selective in taking any orders is to spend more time in research and coming out with better quality output in terms of taste and design. Also, if possible I will do trial baking and design to come out with something more interesting rather than the standard cupcake that I used to do.
So when I received this request from a lady for spiderman theme cupcakes for his boyfriend's birthday, I spent quite some time to research and conceptualise an idea for the theme. I even resort to dig out my son's spiderman figurine for idea. One key learning from this project was that I discover spider actually has 8 eyes.
The spiders' legs were originally positioned higher which make the spiders look even more real but eerie. Therefore, I shifted them down and also made the white funky colored spiders to complement the brown ones. I hope they will not freak out with the look.

Soft Almond Cookies


Few girlfriends of mine enjoy the almond cookies from this prestigue high end cookies shop in Esplanade. Therefore, one of my "To-Bake" is to bake and perfect this soft almond cookies. Texture wise is pretty close to the purchased ones but taste wise need some perfection based on my expectation though to some they considered this first try quite good. It is quite an easy recipe and will try baking this again when I find time.

MIA and Y2008 Plan

For those whom still bother to log on my blog occasionally to check on my baking status, you would have realized that I had actually MIA for few months due to few reasons:

1) I need a long and good break from all the baking for X'mas and Chinese New Year goodies. Also, would like to thank those whom support and placed order for the Chinese New Year.

2) My gal is in P1 this year. As a typical kiasu mum, I would like to channel more time, energy and focus towards her study.

3) Unfortunately, both of kids were involved in accidents one after another in 2 months time. I am really very glad they are fine now.

Plan for Y2008:
With all the changes and happening in my life lately, and trying to juggle all the multiple roles that I am holding (employee, wife, mummy, boss to my domestic helper, my latest and new role as personal tutor to my gal), I know I need to repriortize my approach to my hobby and passion in baking and cake decoration. I want to spend more time and energy to explore new recipes (my colleagues and neigbours must be cheering on this) and further improvise the baking and cake decoration skill. As a result, I will be very selective on any order enquiries that I receive.
